INGREDIENTS
1 cauliflower, in small florets
1 small onion, chopped
2 cloves garlic, crushed
1 tablespoon rosemary
1 tablespoon thyme
250 ml coconut milk
20 grams of nutritional yeast
juice of half a lemon
1½ liters of vegetable stock
INSTRUCTIONS
Fry the onion and garlic in a small layer of stock.
Add the cauliflower, rosemary and thyme and fry for about 4 minutes over medium heat. Then add the stock and let it simmer for about 15-20 minutes until the cauliflower is soft.
Turn off the heat and pour the coconut milk into the soup.
Puree the cauliflower until you have a nice thick soup.
Finally, stir the nutritional yeast and lemon juice into the soup.
