Sweet potato and black bean nachos


  • 750 g sweet potatoes, cut into thin rounds
  • 1 tbsp olive oil
  • 1 red onion
  • 2 tbsp red wine vinegar
  • 1 can of Biona Organic Black Beans
  • 200 g tomato salsa
  • 75g tortilla chips
  • 100g Vegan grated cheeze Simply V
  • 1 large avocado
  • 1 red pepper
  • 1 lime
  • 1 container of O'fraiche Friendly Vikings


1. Preheat the oven to 200 degrees.
2. Place the sweet potato in an oven dish with oil, season the sweet potato with salt and pepper and bake for 30 minutes until caramelized and soft.
3. In the meantime, mix the red onion with the vinegar and a pinch of salt in a bowl. Let this sit for 25 minutes.
4. Place the grill on high heat. Sprinkle the sweet potatoes with the black beans and tomato salsa and grill for 6-7 minutes.
5. Crush the tortilla chips in a bowl and mix them with the grated cheese. Add this mixture to the potatoes and grill until golden brown.
6. Mix the avocado with the lime juice and the pickled onion.

7. Place the sweet potato, black bean, and salsa mixture in a bowl. Top with red pepper and the O'fraiche.
8. Serve immediately and enjoy!
