Pumpkinsoup
Supplies
(For 4 persons)
- 1 nutmeg pumpkin, medium sized
- 1 chili pepper
- 1 can of tomatoes, 400 g
- 1 can coconut milk, 400 ml or 250 ml soy cream
- 1 red onion, large
- 4 cloves of garlic
- 2 tsp curry powder
- ½ tsp cumin
- ½ tsp coriander
- 3 tbsp soy sauce, tamari or shoyu
- water
Preparation method

Peel the pumpkin, onion and garlic.

Cut the peeled ingredients and the chili pepper into pieces.

Place all ingredients in a saucepan and add about 400 ml of water.

Bring this to the boil and let it simmer until the pumpkin is done.

Mix everything using a blender or hand blender, adding additional water until the desired thickness is reached.

Serve with some ground black pepper and fresh coriander.
