Jackfruit salad


(For 4 persons)

  • 400 g Biona young jackfruit in a can
  • ½ k omen
  • 1 salad onion
  • 10g fresh coriander
  • 1 lime
  • 6 tbsp mayonnaise from The Mayo Sisters
  • 50g butter lettuce
  • ½ tsp chili powder

Preparation method

  1. Drain the jackfruit, rinse under cold running water and pat dry with a clean tea towel. Finely chop the jackfruit. Cut half the cucumber into small cubes of approximately ½ cm and the salad onion into thin rings. Finely chop the coriander.
  2. Scrub the lime clean, grate the green peel and squeeze half of it. Mix the mayonnaise with the salad onion, ⅔ of the coriander and the lime zest and juice. Mix in the jackfruit and season with salt if necessary.
  3. Divide the lettuce, cucumber and jackfruit salad successively among the glasses. Garnish with the rest of the coriander and sprinkle with some chili powder.
